Whisper the incantation "open sesame" and unlock the magic of the Sesamo Bar from Valenza Chocalatier.  Italians were among the first to incorporate sesame seeds into their cuisine, dating back to the Roman Empire when they were imported from Egypt and Persia.  Today they are mostly prevalent in southern Italy where they are featured in a variety of baked goods, most notably cookies and savory breadsticks.  The Sesamo bar highlights the prized seeds in a rich white chocolate that's been mixed with just a touch of dark chocolate to create a luscious, caramel colored base. Sesame seeds are then roasted to concentrate their flavor and dusted with Sicilian sea salt before being incorporated into the chocolate mixture.  The final product is a dense and intensely flavored bar that is addictive on its own and the perfect accompaniment to a plate of fresh fruit and after dinner cheeses.

In honor of Grandma Di Martino & CocoaNymph:  Amy Jo has great memories of her Italian Grandmother dunking delicious sesame cookies in coffee while chatting around her kitchen table. She kept these homemade Italian cookies “fresh” in the Ice Box! Fast-forward 30 years during Amy Jo's Ecole Chocolat Internship in Vancouvor BC at CocoaNymph, she tried their Sesamo Bianco bark and was taken right back to her Grandma’s kitchen table in just one bite.
